Nando's has a reputation as the safe fast-casual choice for coeliacs — flame-grilled chicken, Portuguese sauces, and breads that feel easy to route around. We went through Nando's Australia's official Allergen Guide (updated September 2025) and their help centre statements to test that reputation properly.

The short answer
Close to the best it gets in fast-casual — but officially still conditional. The core Nando's menu — bone-in chicken, the PERi-PERi bastes, chips, tenders, most salads — is wheat-free by ingredient. But Nando's own help centre states it "cannot guarantee that any of our products are 100% free from traces of gluten due to potential cross-contamination during processing, storage, or preparation". And there are genuine surprises in the fine print. Order the core menu and you're in a strong position; stray into the sides list without checking and you can be caught out.

What's actually gluten free at Nando's (per their official guide)
The wheat-free core is bigger than most people expect:
- Bone-in chicken (the whole bird, 1/4, 1/2) and 4 PERi-PERi Tenders
- Mixed platter and BBQ ribs
- All the bastes and sauces — Lemon & Herb, Mild, Hot, Extra Hot, BBQ
- Chips, PERi PERi Chips and Sweet Potato Chips
- Corn on the cob, coleslaw, garden salad, roasted broccoli
- PERinaise and mayo dips, chocolate mousse
That's a full meal — chicken, chips, dip, dessert — without touching wheat.
The surprises: where wheat hides
This is why reading the actual allergen guide matters:
- PERi Mac & Cheese contains wheat (yes, really — it's flagged in the official guide)
- PERi-Harvest Bowl and Grain Salad contain wheat — the two items that look like the "healthy" picks
- The Superfood Veggie Patty carries a wheat traces flag; the Great Pretender plant protein contains wheat
- Loaded PERi Chips carry a wheat traces flag (the toppings)
- Paella with chicken and the Avo Parmesan Crunch Salad carry wheat traces flags
- All the obvious breads — pitas, wraps, soft buns, Portuguese rolls, garlic bread — contain wheat, as does the Naughty Nata dessert pastry
Where the cross-contamination risk sits
Nando's official position is candid: they serve gluten-containing breads in the same kitchens, items can contact one another during service or delivery, and no product is guaranteed trace-free. The specific vectors worth knowing:
- Chicken fillets in burgers, wraps, pitas, salads and bowls carry a wheat traces flag — the same fillets in different menu contexts have different exposure. Ordering fillets means accepting the trace flag.
- The bread-toasting station — gluten breads are handled and toasted alongside service.
- Supplier-level traces — some ingredients arrive with trace warnings before they even hit the kitchen.
The fryer question
Chips, PERi PERi chips and sweet potato chips are all wheat-free per the allergen guide — which tells you the chips themselves aren't the issue. What the guide doesn't promise is a dedicated fryer, and the coeliac community reports both ways: many describe dedicated chip fryers at their local Nando's, a minority report shared oil. Since breaded items are limited (the veggie and plant patties), the fryer risk profile is genuinely lower than most chains — but ask in store once: "Is the chip fryer separate?"
How to order if you're coeliac
- Bone-in chicken is your safest order — no trace flags in the official guide.
- Chips and sweet potato chips are wheat-free; confirm the fryer question once and then relax.
- State coeliac disease when ordering, not just "gluten free" — ask for fresh gloves and a clean board for your wrap-less order.
- Skip the burgers, wraps and pitas entirely unless you accept the shared-kitchen trace risk.
- Avoid the PERi Mac & Cheese, Grain Salad and Harvest Bowl — the three stealth wheat items.
- Dessert: the chocolate mousse is wheat-free; the Naughty Nata is not.
A note for low-FODMAP diners
Nando's is one of the better fast-casual picks: plain 1/4 chicken with a lemon & herb or mild baste, chips, and corn on the cob is a workable low-FODMAP plate (mind the garlic in some marinades if you're in the strict elimination phase — the herb bastes are the safest call). The verdict
Gluten free friendly: strongly yes. Coeliac safe: conditional, like every chain. Nando's core menu is the most coeliac-compatible in Australian fast-casual — wheat-free chicken, chips and sauces, with the gluten largely confined to the bread station rather than spread across the line. But Nando's itself won't guarantee trace-free, and the allergen guide's surprises (mac & cheese, harvest bowl) are a reminder to check, not assume. If you're a diagnosed coeliac, Nando's is a reasonable regular: order the core menu, state your needs, and ask the fryer question once.
