Certification: Coeliac Australia’s Gluten Free Accreditation Program is the leading venue certification.
Restaurants: Restaurant “gluten-free” claims are not regulated to the packaged-food standard — confirm preparation with staff.
Labeling threshold: The FDA’s 2013 gluten-free labeling rule (less than 20 ppm) applies to packaged food.
